The researcher began collecting samples in October 2018 to February 2019. A total of 12 meat samples were collected from various butchers in Latrikunda market to access the weight quality, proportions of offal and bone into 2000 grams of meat.
The mean bone weight was 359 grams, home weight 1890 grams and offal weight was 350 grams. The bone standard deviation was 86.78 grams; the home weight standard deviation was 98.19 grams while the offal weight standard deviation happened to be 82.60 grams.
The results indicated that the proportion of both the bone and offal in 2000 grams of meat is so exorbitant and disproportional to the value price of the commodity.
